A dose-response model describes the magnitude of the response of something to a stimulus/dose. You could use a dose-response curve to correlate an unknown specimen's activity to a known concentration. This could be used to determine the residual protein amount in biological therapeutics (and other ELISA assays) or to measure the amount of cell lysis in relationship to the concentration of viral solution. It also can be used in areas that need to identify the hazard potential.
